Skinny Meal Prep for Weight Loss
Skinny healthy meal prep with boneless skinless chicken thighs for weight loss. So absolutely delicious and you won’t even know that you are eating a low calorie and low carb lunch OR dinner for the week. This meal prep will last you about 5 days and it’s SO delicious and flavorful with the perfect combination of spices and creamy dipping sauce that you’ll hardly notice you’re dieting at all!

Also you will need a simple cookie or baking sheet for the veggies: https://amzn.to/3tKRKG3
Veggies: string beans, cherry or grape tomatoes, and red onion
Protein: Boneless skinless chicken thighs (about 2.5 lbs.)
Fats: Mayo, sour cream, and olive oil

Skinny Meal Prep for Weight Loss
Ingredients
- 2.5 lbs. of boneless skinless chicken thighs
- about 6 oz. of green beans
- 2 handfuls of cherry or grape tomatoes
- 1 red onion medium size sliced
- 1 tbsp garlic infused olive oil
- 2 tbsp. of Lemon pepper seasoning 1 tbsp. for the veggies & 1 tbsp. for the chicken
- 1½ tbsp of Poultry seasoning
- 1/2 a lemon the juice
- 3-4 cloves of garlic minced
- 2 tbsp. of sour cream
- 4 tbsp. of mayo
- 1 tbsp. of fresh dill or use the squeezy bottle like I did
- kosher salt and black pepper
Instructions
- preheat oven to 400 degrees
- assemble all of the veggies on a cookie or baking sheet & drizzle the olive oil over them & season with the lemon pepper, salt, and black pepper. Toss all of the veggies in the oil and seasoning to distribute evenly
- pop in the oven at 400 degrees and bake for 20 minutes
- season the chicken thighs and brown in olive oil at medium to medium high heat for about 5 minutes each side.
- pop the pan in the oven at 350 degrees to finish cooking the chicken all the way through for about 10-15 minutes
- the dipping sauce: combine the garlic (minced), lemon juice, mayo, source, dill, salt, and pepper; mix it up!
