Texas Rice Casserole

Ingredients
- 1 tbsp olive oil
- 1.5 – 2 lbs ground beef
- 2 tbsp taco seasoning
- 1 yellow bell pepper chopped
- 1 onion chopped
- 4 garlic cloves chopped
- 10 oz can Rotel mild diced tomatoes and green chilis drained
- 10 oz can Rotel diced tomatoes with lime juice and cilantro drained
- 6 cups cooked white rice divided
- 15.25 oz can whole kernel no salt added sweet corn drained & divided
- 12 oz freshly shredded colby jack divided
- ⅓ cup chopped green onions divided
Instructions
- To a pan, add in olive oil and ground beef. Break the beef up using a meat masher and then shake in the taco seasoning. Next, add in yellow pepper, onion, and garlic. Saute that all together on a medium-high until the beef is browned and the onions and peppers are soft and translucent. Then, add in both cans of the drained Rotel and stir that in. Saute that for about 3 – 5 minutes. Once it’s done, set it aside.
- Now time to assemble the casserole! First grease a deep baking dish and add half of the cooked meat mixture in an even layer at the bottom of the dish. Next, take half of the cooked rice and add it over the meat mixture in an even layer. Then, evenly sprinkle over half of the drained corn. Lastly, evenly sprinkle over half of the freshly shredded cheese and half of the chopped green onions. Now, repeat that layering again with the other half of the meat mixture, cooked rice, drained corn, freshly shredded cheese, and the chopped green onions.
- Spray a piece of aluminum foil with non-stick cooking spray and lay it over the baking dish spray side down (make sure it is tented so it's not touching the cheese). Place the baking dish in the oven at 375°F for 30 – 35 minutes. After 20 minutes remove the aluminum foil and let it bake uncovered for the remaining 10 – 15 minutes. Once it's done let it sit for about 10 – 15 minutes before serving.
- Serving suggestion: enjoy the casserole as it is or serve it as a burrito bowl! You can mix it up the casserole up, top it with salsa, sour cream, guacamole, and serve it with tortilla chips!
