remove the casings from all 5 sausages. Add them to a pan with olive oil and separate them up and crumble with a wooden spoon, potato masher, or your hands (like I do) LOL
Add the chopped onion, bell pepper, garlic, sun dried tomatoes, crushed red pepper, another tbsp. of olive oil, and salt and pepper. Sauté at about a medium heat until everything is golden and browned. Continue mashing up the sausage with a wooden spoon or masher while it's cooking.
Add the rice and sauté for a couple minutes with the rest of the ingredients.
Add the entire can of diced tomatoes & chicken stock. Bring the pan up to a rolling boil. Then, immediately once it boils, lower to a low simmer. Cover the pan and cook for about 20-30 minutes or until the rice is cooked and fluffy!
