Mediterranean One Pot Chicken and Rice
Ingredients
- 1 pack of ButcherBox boneless skinless chicken thighs
- Seasoning blend for chicken thighs: 1 tsp of each: salt pepper, onion powder, garlic powder, dried parsley, and paprika
- 1 cup of long grain rice
- 2 tbsp of olive oil & 1 tbsp of sun dried tomato oil
- Juice of 1 lemon and zest of 1/2
- 3-4 tbsp of chopped sundried tomatoes
- 6 garlic cloves sliced
- 1/2 of a red onion chopped
- 2 tbsp of tomato paste
- 1/2 cup of white wine or dry champagne
- 1.5 cups of chicken stock
- Fresh parsley and basil
Instructions
- Season the chicken and brown on each side then remove from the pan.
- In the same pan saute onions, garlic, sun dried tomatoes, and salt & pepper until golden.
- Zest half of a lemon into the pan and add the juice of the whole lemon. Add in tomato paste and brown it.. Deglaze the pan with wine and add in the rice.
- Add chicken stock and bring pan to a boil.
- Add the chicken and its juices back to the pan with parsley and basil.
- Pop the cover on and bake in a 400°F oven for 45 minutes!
