Today I’ve got the most delicious Creamy Tomato Tortellini Soup for my peeps. This soup is so delicious and has a delicious soup base that is so savory yet has a little kick in it. If you’re looking for that perfect meal for the family on any night, this is your dish. It’s a party in the pot tonight because this dish will be gone by morning. When I made this dish I was going for a rich taste with a good little spice kick to knock out your morning sickness. It came out so perfectly and the tortellini was so tender, just look for yourself!
This is the sausage, onions, garlic, seasonings and tomato paste sautéing in the pan. It only takes 5-10 minutes and already smelled so good. I already knew at this point this would be one of my favorite soup recipes.

This is the end product and surpassed my expectations. The pillowy cheese stuffed tortellini in this creamy tomato sauce made for an excellent duo.

Creamy Tomato Tortellini Soup 🍅
Ingredients
- 1 lb italian pork mild sausage
- 2 9 oz packs of 3 cheese tortellini
- 2 small onions chopped
- 8-10 garlic cloves chopped
- 4-5 tbsp olive oil
- 1 cup heavy cream
- 3 tbsp flour
- 2 tbsp tomato paste
- 28 oz can crushed tomatoes
- ½ cup + 2 tbsp grated pecorino romano divided
- 3 oz baby spinach chopped
- 1 tsp dried basil
- 2 tsp italian seasoning
- 2 tsp garlic powder
- 1 tsp crushed red pepper flakes
- Salt & pepper to taste (layer as you go)
- 5 cup Chicken Stock
Instructions
- In a pot with olive oil, add in the ground sausage, mash it up, and let that saute for 2 minutes.
- Add in the onions, garlic, dried basil, italian seasoning, garlic powder, crushed red pepper flakes, and salt & pepper. Saute that together for 5-7 minutes until cooked through.
- Then add in tomato paste and saute it for about 1 minute. Shake over the flour and whisk continuously for 2 minutes. Bring the pot to a boil, pour in the chicken stock, and continue whisking continuously for 2-3 minutes. Once the pot comes to a boil, lower it to a simmer.
- Bring the pot to a boil, once it comes to a boil, stir in the crushed tomatoes and heavy cream. Lower the pot to a medium heat and let it cook for about 10-15 minutes.
- Bring the pot to a low simmer, add the pecorino romano, then bring the pot to a boil. Once it comes to a boil, add in the tortellini, and let that boil for about 5 minutes or until the tortellini is al dente.
- Then add in the spinach and 2 tbsp of pecorino romano, stir that together, and you’re ready to serve!
What can I use instead of the heavy cream
