EASY Weeknight Picadillo
This EASY weeknight Picadillo is the perfect affordable meal for the family! Packed with flavor and the leftovers are even better! It’a a cinch to make! You just need some ground beef, potatoes, onions, peppers, and a few little pantry extras! In addition, the next night you can make empanadas!! Oh my word! This mixture fried in empanada dough is amazing!! Le’t make it!I can’t wait for you to try this delicious meal!

Ingredients
- 1.5 lbs of ground beef
- 5 cloves of chopped garlic
- 1 tbsp. of Complete seasoning buy complete seasoning here
- 1 tbsp of Adobo seasoning buy Adobo seasoning here
- 2 russet potatoes peeled and diced
- 1 tbsp. of olive oil
- 1 small diced onion
- 1 diced orange bell pepper
- 1 tsp. of cumin seasoning
- 1 cup of water
- 1 bay leaf
- 1/2 cup of white wine of choice
- 2 tbsp. of tomato paste
- 8 oz. of tomato sauce
- about 1/4 cup of Spanish olives or as many as you like; or omit
- 1-2 tbsp. of the brine from the Spanish olives jar
- cooked white rice
- garnish: chopped cilantro
- salt & pepper to taste
Instructions
- In a bowl add the ground beef, Complete seasoning, Adobo seasoning, chopped garlic, and 1/2 tsp of salt, and 1/2 tsp. of pepper. Let the meat set with seasoning and garlic on the counter for 30 minutes before cooking to bring to room temperature and marinate the meat.
- Peel and dice two potatoes, add to a pot of boiling salted water, and boil just until tender.
- Next, add olive oil to the pan, one onion chopped, and one orange bell pepper chopped and sauté until golden. Season with salt pepper and cumin.
- Add The meat mixture to the pan and while the meat is browning mash it down with a wooden spoon. Keep pressing and mashing it down until your meat is browned.
- Then, add one cup of water and a Bayleaf and let that water boil down until the meat mixture is creamy.
- Add about a half a cup or so of white wine, 2 tablespoons of tomato paste, and 8 ounces Of tomato sauce. Sauté about five minutes.
- Taste for seasoning and add a little more salt pepper and cumin if needed. Then fold in the boiled potatoes gently.
- Add Spanish olives and a little bit of the brine from the jar. Mix it in and simmer another 5 minutes together.
- Serve over white rice and enjoy the most delicious meal ever!

The trick is to mash down the ground beef while you’re browning it and also adding the water is key to creamy delicious Picadillo!
