  • garnish: chopped cilantro

Instructions

  • In a bowl add the ground beef, Complete seasoning, Adobo seasoning, chopped garlic, and 1/2 tsp of salt, and 1/2 tsp. of pepper. Let the meat set with seasoning and garlic on the counter for 30 minutes before cooking to bring to room temperature and marinate the meat.
  • Peel and dice two potatoes, add to a pot of boiling salted water, and boil just until tender.
  • Next, add olive oil to the pan, one onion chopped, and one orange bell pepper chopped and sauté until golden. Season with salt pepper and cumin.
  • Add The meat mixture to the pan and while the meat is browning mash it down with a wooden spoon. Keep pressing and mashing it down until your meat is browned.
  • Then, add one cup of water and a Bayleaf and let that water boil down until the meat mixture is creamy.
  • Add about a half a cup or so of white wine, 2 tablespoons of tomato paste, and 8 ounces Of tomato sauce. Sauté about five minutes.
  • Taste for seasoning and add a little more salt pepper and cumin if needed. Then fold in the boiled potatoes gently.
  • Add Spanish olives and a little bit of the brine from the jar. Mix it in and simmer another 5 minutes together.
  • Serve over white rice and enjoy the most delicious meal ever!

Notes
