Today we are making Meem’s banana bread! Who is Meem’s? Meem’s is my mother and that is what my children call her and she just happens to make the most delicious, simple, and moist banana bread you ever will try! Nearly every ingredient you will find in your pantry right now, but you may need to buy some bananas and let them sit on the counter for about a week to let them get nice and sweet and brown before making this bread. Unlike when you peel and eat a banana and you may discard the brown spots, in banana bread that’s what makes your bread extra special, moist, and delicious. I added chocolate chips into my banana bread, but you can add them, omit them, or replace them with whatever chip or nut you love! You are in for a special treat! Let’s make it!

Melissa Jo’s Banana Bread

Ingredients
  

  • 1 ½ cups + ½ tbsp all-purpose flour divided
  • ¼ cup white sugar
  • ¼ cup + 1 tsp light brown sugar divided
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 large very ripe bananas mashed
  • 1 beaten egg room temperature
  • cup + 2 tbsp softened salted butter divided
  • 1 tsp mexican vanilla extract
  • 6 ounces chocolate chips
  • Optional: walnuts

Instructions
 

  • In a mixing bowl, whisk together the flour, white sugar, ¼ cup brown sugar, baking soda, and salt. Ensure the dry ingredients are well combined and set the bowl aside.
  • In a separate mixing bowl, add in the ripe bananas and mash them up using a mashing tool or a fork until they form a smooth consistency. Then, add the beaten egg, ⅓ cup of softened butter, and vanilla extract. Mix that together until the ingredients are fully combined, resulting in a smooth texture.
  • Add the wet ingredients into the bowl of dry ingredients. Carefully fold the mixture together just until combined. DO NOT OVERMIX IT, as this can result in a denser texture.
  • In a separate small bowl, toss the chocolate chips with ½ tbsp of flour (this will prevent the chips from sinking to the bottom of the batter during baking). Gently fold the flour-coated chocolate chips into the banana bread batter. You can also add walnuts if you’d like!
  • Grease a loaf pan with about 2 tbsp of salted butter and dust the greased pan with a little bit of flour. Also, sprinkle about a tsp of brown sugar on the bottom of the pan for an extra touch of sweetness. Now, Pour the batter into the greased loaf pan, ensuring it is evenly distributed.
  • Place the loaf pan in a 350°F preheated oven and bake it for 45 – 50 minutes. Once it’s done, remove the banana bread from the oven, and let it cool in the pan for 3 – 5 minutes. Then, remove it from the loaf pan and transfer it to a wire rack to cool completely before slicing. Serve and enjoy!
