Texas Crab Grass 🦀

I got my hands on a vintage recipe book from the days past and it is packed with incredible recipes that haven’t been made in far too many years. As I was looking through the book I found something really interesting that I never heard of. The name of it was Texas Crab Grass. Now, I have made a recipe called Texas Trash Chicken and it is stunningly delicious so I thought to myself maybe I will try this one out. I took a look at the recipe from the book and I was a little bit leary, but I thought with the name alone I just have to try it!

So, I made a minor adjustment by adding a little garlic salt to the recipe, but other than that I followed the recipe exactly minus the double broiler. When I tell you you’re in for the treat of your life with this recipe. You are going to have not only the most delicious appetizer at the party, but the most interesting as well! And what’s cooler then serving up some Texas Crab Grass at your next party…not much lol. Let make it!

Texas Crab Grass

Ingredients
  

  • ¼ cup + 2 tbsp olive oil divided
  • 1 small onion diced
  • 1 tsp cracked black pepper divided
  • 1 baguette sliced
  • 1 & ½ tbsp garlic salt divided
  • 1 stick butter
  • 1 cup parmesan cheese
  • 6 oz can lump crab meat drained
  • 10 oz bag frozen chopped spinach thawed & drained

Instructions
 

  • In a small pan, heat up 2 tbsp of olive. Then, add the onion, ½ tbsp garlic salt, and ½ tsp cracked black pepper. Saute that on medium-medium high heat for about 10 minutes until golden.
  • To make the crostini, In a small bowl combine ¼ cup of olive oil, 1 tbsp garlic salt, and 1 tsp cracked black pepper. Slice up a baguette and place them on a baking sheet lined with a rack. Brush that oil mixture onto each piece of bread and bake them in the oven at 400°F for 5-10 minutes until lightly toasted.
  • In a separate pan on a low heat, melt the butter. Once the butter is melted, shake in the parmesan cheese and whisk that together until the cheese is melted (make sure you stay on a low heat). Then, add in the drained crab meat and chopped spinach. Stir that together until combined. Lastly, stir in the sauteed onions until everything is combined. *This step is just too warm all the ingredients through. Don't raise the heat too high, once its warmed it is done!
  • Serve the texas crab grass over the crostini and Enjoy!
