So I was planning out my recipes for the week and I was dreaming about Texas Trash Dip. You may or may not know this about me but I am 100,000% obsessed with Taco Bell bean burritos. Hence, My Taco Bell Bean Burrito Dip! It has always been my order and forever will be my order until either Taco Bell or myself ceases to exist.

As I was meal planning and intermittent fasting I was starving and I came up with the best dinner of all time… of all time you ask? Yes. Of all time! There will be no better way to make chicken breasts from here on out once you make this dinner. It is called Texas Trash Chicken and it has all of your favorite flavors from Texas Trash Dip in a full meal!

Added bonus; it’s as easy as running through a Taco Bell drive-through! Your entire prep time will be no longer than 15 minutes and dinner will be served in 30 minutes after that. Now grab your apron and lets make it!

Pat your chicken breasts dry and allow them to come to room temperature. I used three boneless skinless chicken breasts for this Texas Trash Chicken recipe.

Rub 1/2 a tbsp of Taco Seasoning onto both sides of the chicken breasts. Set the seasoned chicken aside.

Pour 1 cup of Red Enchilada Sauce into your baking dish to cover the bottom of the dish.

Using an Ice Cream Scooper add 12 dollops (14 oz) of Refried Beans over the Enchilada Sauce.

Take your seasoned chicken breasts and place them right over the dollops of Refried Beans in the baking dish.

In a Large Bowl, add in 8 oz softened cream cheese and 1 tbsp Taco Seasoning.

Add in the whites of the chopped green onions. (Save the greens for garnish)

Next, add in 4 oz Mild Green Chilis (you can use hot green chilis to make it spicier) and 1 tbsp of Enchilada Sauce.

Lastly, add in an oz of freshly shredded Colby jack (save the other 7 oz for the topping).

Mash that together until creamy and fully combined.

Divide the cream cheese mixture into three equal parts and place it over the three pieces of chicken. Smooth it out to cover the entire piece. Also, sprinkle 1/4 cup chopped red onion all around the outside of the chicken.

Now, evenly sprinkle over the remaining 7 oz of freshly shredded Colby jack to cover the top. I use this Cheese Grater to freshly shred my cheese for better cheesier results!

Lastly, garnish with a sprinkle of Taco Seasoning and the remaining greens of the chopped green onions. Bake at 400°F for 30 minutes.

Serve with rice and drizzle that delicious sauce from the baking dish over the rice.

Ingredients
  

  • 3 chicken breasts
  • 1/2 tbsp + 1 tbsp taco seasoning divided
  • 1 cup + 1 tbsp enchilada sauce divided
  • 14 oz can refried beans
  • 8 oz cream cheese softened
  • ¼ cup green onions chopped (separate the greens and whites)
  • 4 oz can mild green chilis
  • 8 oz freshly shredded colby jack divided
  • ¼ of red onion chopped
  • Rice, for serving

Instructions
 

  • Pat your chicken dry of any moisture and allow to come to room temperature. Season both sides of the chicken breasts with a ½ tbsp of taco seasoning total.
  • In a 9×13 baking dish, pour 1 cup of enchilada sauce in an even layer. Next, using a ice cream scoop or spoon add about 12 dollops (14 oz) of the refried beans over the enchilada sauce. Then place the three seasoned chicken breasts spaced out over the refried bean dollups.
  • In a bowl, add in softened cream cheese, 1 tbsp taco seasoning, the whites of the chopped green onions, green chilis, 1 tbsp enchilada sauce, and 1 oz of the freshly shredded colby jack. Mix that together until fully combined.
  • Divide the cream cheese mixture evenly over the three pieces of chicken and smooth it out to cover the entire piece. Sprinkle the chopped red onions around the chicken. Then, sprinkle the rest of the freshly shredded colby jack over the top of the chicken to cover the top.
  • To garnish, shake a tiny bit of taco seasoning over the cheese and sprinkle over the greens of the chopped green onions.
  • Place that in the oven and bake at 400°F for 30 minutes.
  • Serve with rice and garnish with the sauce from the pan and some more green onions.

  • If the top starts to get too brown in the oven, put a piece of tin foil over it towards the end.

    Needs to bake longer than 30 minutes. And I used thin sliced chicken breasts and still needed to bake longer. The flavors together are very tasty!
