What you will need:
- Lump Crab: 2 (6 oz) cans of lump crab meat. You can also buy this in a container in your seafood department, but this is way more cost effective and absolutely delicious!
- Fresh produce and herbs: 1 lemon, 2 cloves of garlic, green onions, and fresh italian leaf parsley
- Cheese: the recipe calls for pecorino romano cheese, but any cheese will do! Parmesan, white cheddar, monterey jack, etc…
- Salmon -I used almost 2 lbs. of salmon. Buy salmon with the skin on; this helps keep the stuffing inside the salmon. If you do not like the skin, then remove the skin after baking in the oven. It falls off VERY easily. VERY IMPORTANT: Ask the butcher for a thick cut of salmon so you can make slits in the salmon and stuff it.
- Seasoning: This recipe calls for Tony’s creole, Sazon, and black pepper,. No salt because the Tony’s and Sazon contain salt already.

Crab Stuffed Salmon
Ingredients:
- 2 (6 oz) cans of lump crab meat
- 2 lbs. of salmon (skin on)
- 2 stalks of green onions
- 2 cloves of garlic
- 1 lemon (juice & zest)
- handful of italian leaf parsley chopped
- 1 8 oz. package of cream cheese
- 4 tbsp. of pecorino romano cheese
- about 15 Ritz crackers
- 1 tbsp. of Tony’s creole
- 1/2 packet of Sazon
- black pepper to taste
- 1/2 stick of butter
Directions:
- lightly season the salmon with Tony’s Creole seasoing and cut into 3-4 servings
- cut slits into the thickest part of the salmon lengthwise (make sure you buy a thick cut of salmon)
- mince the garlic
- chop the green onions & parsley
- in a bowl add:
- 1 package of cream cheese softened
- the chopped herbs and vegetables
- juice of 1 lemon
- zest of 1 lemon
- crushed up ritz crackers
- lump crab meat
- cheese
- seasoning
- fold in all of the ingredients gently
- stuff the salmon with the filling (pack a lot in there)
- place the stuffed salmon on a greased baking sheet
- I cover a pan with foil for easier clean up and spray the foil with Pam
- melt the butter and pour over the salmon
- bake in the oven at 350 for 25 minutes
- enjoy!
