Tuna Salad in Cloud Bread ☁️

Don’t ever say I don’t do low carb because I present to you my best tuna salad recipe served rolled in pillowy cloud bread! What is cloud bread you ask? Well I’m not sure it would constitute as an actual bread product. However, it is a pillowy soft kinda bread that is made with just egg white and cornstarch! But, when you follow the method I present to you in this recipe blog and if you are a low carb or no carb queen you will be making it over and over again and using it to stuff all of your sandwiches in. This tuna salad recipe is so delicious I made a big batch just for you so you can meal prep it and have it all week, but if you want less you can certainly cut this recipe in half. So we’re going to add a little of this and a little of that and make it!

Tuna Salad in Cloud Bread

Tuna Salad
- 5 (5.1 oz) cans tuna white packed in water
- 4 – 5 shakes of worcestershire
- ¼ of a large red onion minced
- 2 large carrots diced small
- 2 large celery stalk diced small
- 4 dill pickle spears diced small
- 2 ½ tsp celery salt
- Cracked black pepper to taste
- 2 cups mayonnaise
- 1 lemon juiced
Cloud Bread
- 2 cups egg whites
- 2 tbsp cornstarch
- 2 tbsp Zaatar seasoning
Instructions
- Take a large mixing bowl and place a colander on top of the bowl. Empty the cans of tuna into the colander and squeeze all of the water out as much as you can.
- Now, add the tuna to a large bowl and shake worcestershire sauce over the tuna. Mix until combined. Next, add in red onion, carrots, celery, pickles, celery salt, cracked black pepper, and mayo. Mix that together until everything is combined. Then squeeze in the lemon juice and mix that together. Taste and add more seasoning if needed. Cover and chill.
- To make the cloud bread, in a large mixing bowl add egg white and blend the egg whites with an electric mixer until stiff peaks form (about 3-5 minutes of mixing at medium high speed).
- Add in the cornstarch and Zaatar seasoning and fold everything together gently. Add a few scoops of the mixture onto a baking sheet lined with parchment paper. Bake in a 300° oven for 23 minutes. Remove from parchment paper and add the tuna to the wrap. Top with banana peppers and tomatoes and wrap! Enjoy!
