AIR FRYER Salmon Salad

The secret is out! I don’t simply exist on hot cocoa cups and creamy lemon pasta! LOL Here is my go-to recipe for my favorite air fryer salmon salad that I eat for lunch or dinner! I am dropping my BEST spice blend in this recipe and one of my many homemade salad dressings! This one in particular goes so well with a creamy blue cheese mixed in! SO let’s get this recipe out there so you can try my absolute favorite salmon salad!

AIR FRYER Salmon is a cozy main course made with salmon filet, brown sugar, and garlic powder—simple and delicious.

Ingredients
  

  • 2 pieces of salmon filet about 6-8 oz. each
  • Spice Rub:
  • 1 tsp. Brown sugar
  • 1 tsp. Garlic powder
  • 1 tsp. Smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp thyme
Homemade Dressing:
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1-2 tbsp red wine vinegar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon
  • 1 tbsp. Honey
  • salt & pepper to taste
  • 1 cup of spring mix salad blend
  • 1 cup of baby spinach
  • 1/2 cup of grape tomatoes
  • 1/4 of red onion diced
  • 2 tbsp. of goat cheese crumbles
  • 2 tbsp. of pomegranate honey walnut fusion crumbles
  • 2-3 tbsp. of store-bought creamy blue cheese dressing I love Litehouse brand

Method
 

  1. Prepare the spice rub by adding all of the ingredients listed above and mix together.
  2. Next, prepare the homemade dressing. Whisk together all of the ingredients listed above except the olive oil. After it’s all incorporated add the olive oil and whisk in until emulsified. Store in a mason jar.
  3. Pat the salmon dry of any moisture and the salmon should be at room temperature.
  4. Pack the seasoning blend into the salmon on all sides and let the seasoned salmon rest for 30 minutes before air frying to allow the spices to marinate the fish.
  5. Air fry the salmon at 400 degrees F. for 8-10 minutes.
  6. Prepare the salad with spring mix, baby spinach, chopped red onion, cherry tomatoes, salmon, and top with goat cheese crumbles & pomegranate honey walnut fusion crumbles.
  7. Top with as much homemade dressing as you like and add store bought creamy blue cheese dressing. Chop up all of the ingredients and enjoy!

Notes

  • Dressing: prepare the dressing in a bowl and whisk together the ingredients as you add them. add the olive oil as the last ingredient. You can store the dressing in the refrigerator for about 4-5 days in a mason jar or any jar with a tight fitting lid.
  • When preparing the salmon, pat the salmon dry and make sure it is at room temperature before air frying. Season the salmon liberally and allow the seasoning to work into the salmon for about 30 minutes before air frying.
