Berry Bread Pudding
Ingredients
- 1 loaf brioche bread cubed
- 3 eggs
- 2 cups milk
- 1/2 cup granulated sugar
- 2 tsp vanilla extract divided
- 8 oz strawberries chopped
- 1/2 a dry pint of blueberries
- 1/4 cup all purpose flour
- 1/4 cup brown sugar
- 1/4 cup cold salted butter cut into cubes
- Sprinkle of cinnamon
- 2 cups heavy cream
- 2 cups powdered sugar
Instructions
- In a greased 9×13 baking dish, place 1/2 of the bread cubes in a single layer. Add half of the blueberries & strawberries. Top with the other 1/2 of the bread cubes.
- Add the remaining blueberries & strawberries.
- In a bowl, whisk together the eggs, milk, sugar and 1 tsp vanilla until combined.
- evenly pour the custard all over the bread and berries.
- In a bowl combine the flour, brown sugar, and cold butter, using your hands, two forks, or a pastry cutter, until pebble sized crumbs form. Sprinkle the streusel evenly over the bread pudding. Then sprinkle cinnamon over the top.
- Bake for 45-50 minutes or until bread pudding is golden brown. Remove from oven and cool for at least 30 minutes.
- To make the whipped cream beat together heavy cream, powdered sugar, and 1 tsp of vanilla extract, until its thick and fluffy.
- Once it is cooled top the bread pudding with the whipped cream and garnish with more berries. Enjoy!
