We are making the most delicious lemon potatoes and the best part is they are as easy as can be, but full of flavor! Perfect to serve up next to a delicious leg of lamb on Easter Sunday! It only takes a few ingredients to make these lemony delights! Russet potatoes, lemons, olive oil, and few essential seasonings! I can’t wait for you to try these!

Best Lemon Potatoes
We are making the most delicious lemon potatoes and the best part is they are as easy as can be, but full of flavor! Perfect to serve up next to a delicious leg of lamb on Easter Sunday! It only takes a few ingredients to make these lemony delights! Russet potatoes, lemons, olive oil, and few essential seasonings! I can't wait for you to try these!
Ingredients
- 8 russet potatoes peeled and quartered lengthwise I usually leave a little bit of the skin on
- juice of 2 lemons
- 1/2 cup of extra virgin olive oil
- 2 tsp. of dried oregano flakes
- 1 tsp. of crushed red pepper
- salt and cracked black pepper to taste
Instructions
- Peel the potatoes and quarter them lengthwise
- In a bowl add the juice of 2 lemons, olive oil, oregano, and cracked black pepper and salt.
- Add the quartered potatoes into the bowl and toss them up.
- Spread them onto a baking sheet and cover tightly with foil.
- Bake in the oven at 350 degrees F. for about 60-70 minutes.
- Remove the foil and broil for a couple minutes or until you see them browning up.
- Serve along side of anything…especially leg of lamb!

- I used a baking sheet (cookie sheet) to make these potatoes!

- I used russet potatoes, but you can use other varieties and that will work well, too!
