We are making the most delicious lemon potatoes and the best part is they are as easy as can be, but full of flavor! Perfect to serve up next to a delicious leg of lamb on Easter Sunday! It only takes a few ingredients to make these lemony delights! Russet potatoes, lemons, olive oil, and few essential seasonings! I can’t wait for you to try these!

Ingredients
  

  • 8 russet potatoes peeled and quartered lengthwise I usually leave a little bit of the skin on
  • juice of 2 lemons
  • 1/2 cup of extra virgin olive oil
  • 2 tsp. of dried oregano flakes
  • 1 tsp. of crushed red pepper
  • salt and cracked black pepper to taste

Instructions
 

  • Peel the potatoes and quarter them lengthwise
  • In a bowl add the juice of 2 lemons, olive oil, oregano, and cracked black pepper and salt.
  • Add the quartered potatoes into the bowl and toss them up.
  • Spread them onto a baking sheet and cover tightly with foil.
  • Bake in the oven at 350 degrees F. for about 60-70 minutes.
  • Remove the foil and broil for a couple minutes or until you see them browning up.
  • Serve along side of anything…especially leg of lamb!
  • Make it! Happy Easter!

Notes

    • I used a baking sheet (cookie sheet) to make these potatoes!
    • I used russet potatoes, but you can use other varieties and that will work well, too!
    • Peel the potatoes (I usually leave a little bit of the skin on) and quarter them lengthwise.
