If you’ve been following me for a while, then you already know I literally dream about recipes. I’m not even kidding! The other night I was half asleep, and somehow buffalo chicken dip made its way into my dreams. Next thing I know, my brain starts thinking…okay, everybody loves buffalo chicken dip, but what if we turned it into an easy weeknight dinner?

Then it hit me…back-to-school season is almost here.

Those first few weeks are always crazy. The kids get home hungry, everyone’s trying to get back into a routine, parents have to fill out and sign a zillion forms, and the last thing anybody wants to do is spend hours standing over the stove. That’s exactly how this Easy Creamy Buffalo Chicken and Rice Casserole came to life.

This casserole has everything we all love about Buffalo Chicken Dip…it’s creamy, cheesy, packed with flavor, has just the right amount of buffalo kick, and it’s loaded with tender rotisserie chicken and fluffy white rice to turn it into a complete meal. It’s rich, comforting, ridiculously easy to throw together, and honestly one of those dinners that disappears faster than you can make it.

Some of the ingredients you will need to make this amazing dinner!!!! You can use Hidden Valley Ranch Seasoning packet or the one I used here by Dano’s. Both give ranch delicious effect!

Add your cooked white rice and rotisserie chicken to a large mixing bowl. Mix in the cream cheese until it starts melting into the warm rice. Add the sour cream, ranch seasoning, cream of chicken soup, buffalo sauce, shredded Colby Jack cheese, and green onions.

Stir everything together until it’s creamy and fully combined.

Spread the mixture evenly into a greased 9×13 baking dish.

Crush the Cheez-It crackers in a ziploc bag. Pour in the melted butter and a splash of white wine vinegar, then toss until every crumb is coated. Sprinkle the buttery Cheez-It topping evenly over the casserole. Bake uncovered until hot, bubbly, and golden brown.

Melissa’s Tips!

  • Make sure your rice is already cooked. This casserole is different from some of my other chicken and rice recipes. The rice goes in fully cooked, so don’t add it uncooked or it won’t turn out correctly.
  • Warm rice is your best friend. If your cream cheese isn’t softened (because we’ve all forgotten before!), the heat from the fresh rice will help it melt as you’re mixing everything together.
  • Rotisserie chicken makes life easy. I almost always grab one from Publix when I’m making casseroles. It’s flavorful, saves time, and makes this recipe come together in just minutes.
  • Freshly shredded cheese melts the creamiest. Bagged shredded cheese will absolutely work, but if you have a few extra minutes, shredding your own Colby Jack makes an even creamier casserole.
  • Don’t skip the splash of white wine vinegar. I know it sounds a little unexpected, but trust me! It brightens up the buttery Cheez-It topping without making it taste like vinegar. It’s one of those little tricks that makes people wonder why your casserole tastes so good.
  • Want it even cheesier? I actually meant to sprinkle another layer of shredded Colby Jack over the casserole before adding the topping…and then forgot because I was filming! Go ahead and add it if you want an extra gooey layer underneath that crunchy topping.
  • Don’t overbake it. Since everything is already cooked, you’re simply heating everything through. Thirty-five minutes is just enough time for everything to get hot, bubbly, and perfectly creamy.

🤔 Common Questions

Can I make this ahead of time?

Absolutely! Assemble the casserole up to one day in advance, cover it, and refrigerate. Right before baking, add the buttery Cheez-It topping so it stays nice and crisp.

Can I make this less spicy?

Definitely. Simply reduce the amount of buffalo sauce or add a little extra sour cream if your family prefers a milder buffalo flavor.

Can I use a different cheese?

Of course! Sharp cheddar, Monterey Jack, Pepper Jack, or a Mexican blend all work great. I just happen to love Colby Jack because it’s creamy and melts beautifully.

  1. Before you start mixing everything together, go ahead and cook your white rice if you aren’t using microwave-ready rice. This recipe calls for cooked rice, not uncooked rice, so make sure it’s ready before you begin assembling the casserole. I actually have a favorite way to make white rice that turns out perfect every single time, so if you haven’t seen that recipe yet, be sure to check it out! If you’re in a hurry, those microwave pouches of cooked white rice work just as well and make this dinner even easier. While your rice is cooking, shred or dice your rotisserie chicken and let your cream cheese soften if you remember. And if you forget? Don’t worry…I forgot too! The warm rice actually helps soften it as you’re mixing everything together.
  2. Preheat your oven to 350°F and position the oven rack on the lower rack. Lightly spray a 9×13-inch baking dish with nonstick cooking spray so cleanup is easy later.
  3. Add your cooked white rice and shredded or diced rotisserie chicken to a large mixing bowl. I like starting with the warm rice because it helps soften the cream cheese naturally. If your cream cheese is still a little cold (because life happens!), don’t stress. As soon as you begin mixing everything together, the heat from the rice works its magic.Give the rice and chicken a quick stir until they’re evenly combined.
  4. Add the softened cream cheese to the bowl and begin breaking it apart with a sturdy spoon or spatula until it’s mostly incorporated into the warm rice. Next, stir in the sour cream, ranch seasoning packet, cream of chicken soup, Frank’s RedHot Buffalo Sauce, shredded Colby Jack cheese, and sliced green onions. Keep stirring until everything is completely combined into one rich, creamy mixture. Every bite should have plenty of chicken, rice, cheese, and buffalo flavor throughout. Don’t worry if it looks extra creamy—that’s exactly what you want! As it bakes, everything melts together into the most delicious casserole.
  5. Transfer the buffalo chicken mixture into your prepared baking dish. Use the back of a spoon or an offset spatula to spread everything into an even layer all the way to the edges. Melissa’s little behind-the-scenes tip: I actually meant to sprinkle another layer of shredded Colby Jack cheese over the casserole before adding the topping…and then completely forgot because I was busy filming! If you’re making this at home, I highly recommend adding that thin layer of cheese. It would be absolutely delicious under the crunchy topping.
  6. Place the Cheez-It crackers into a large ziploc bag and crush them into small pieces. They don’t have to be perfectly fine—you still want a little texture. Pour the melted butter into the bag along with a small splash of white wine vinegar. Seal the bag and gently toss everything together until every piece is coated. Don’t skip that tiny splash of vinegar! It doesn’t make the topping taste like vinegar at all. It simply balances the richness of the butter and cheese and gives the topping that little something extra that keeps everyone going back for another bite. Sprinkle the buttery Cheez-It mixture evenly over the casserole.
  7. Place the casserole on the bottom oven rack and bake uncovered for 30-35 minutes, or until the casserole is hot and bubbly around the edges and the Cheez-It topping is beautifully golden brown. Everything in this recipe is already cooked, so you’re simply heating everything through and letting all those creamy flavors come together while the topping gets perfectly crisp. Let the casserole rest for about 5–10 minutes before serving. This helps everything set up slightly and makes it much easier to scoop. Serve warm with a drizzle of ranch or blue cheese and enjoy!

One of my favorite things about this casserole is how easy it is to customize.
Mild: Use about ⅓ cup buffalo sauce instead of the full amount.
Medium: Follow the recipe exactly as written.
Spicy: Add a few extra splashes of Frank’s RedHot before baking or drizzle a little more over each serving.
If your family likes to cool things down a bit, serve it with ranch or blue cheese dressing on the side.

👝 How to Store Leftovers

  • Refrigerator: Store leftovers in an airtight container for up to 4 days.
