Easy Boursin Chicken Bake Recipe

Ingredients
  

  • 1 lb. penne pasta cooked until al dente
  • 3 chicken breasts butterflied
  • 2 packages of original Boursin cheese
  • 1 cup chopped baby spinach
  • 1/4 cup chopped parsley divided
  • 1 tbsp balsamic vinegar
  • 1 tsp brown sugar
  • 2 pints cherry tomatoes
  • Salt and pepper to taste
  • 1 cup freshly shredded mozzarella cheese
  • 1/2 red onion diced
  • 2 tbsp olive oil

Instructions
 

  • Preheat the oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) to get it ready for baking.
  • Prepare the tomato mixture: In a 9×11 baking dish, add the cherry tomatoes, diced red onions, 1/8 cup of fresh parsley, balsamic vinegar, brown sugar, olive oil, salt, and pepper. Toss the mixture gently to combine all the ingredients. Set it aside.
  • Prepare the chicken: Butterfly the chicken breasts and season with salt and pepper. In a mixing bowl, combine the two packages of Boursin cheese, chopped baby spinach, and 1/8 cup of parsley. Mix the ingredients until well combined.
  • Take the Boursin cheese mixture and press it firmly over each chicken breast, ensuring that the whole chicken breast is covered. Use all of the mixture for all 6 chicken breasts.
  • Assemble the bake: Place the chicken breasts on top of the tomato mixture in the baking dish. Sprinkle the freshly shredded mozzarella cheese over the chicken breasts. Add cracked black pepper on top for extra flavor.
  • Bake in the oven: Put the baking dish in the preheated oven and bake for approximately 30 minutes or until the chicken is nicely browned and the cheese is bubbly and golden.
  • Prepare the side dish: While the chicken is baking, take the cooked penne pasta and toss it with a little butter for added richness.
  • Serve and enjoy: Once the chicken bake is done, remove it from the oven and let it cool for a few minutes. Serve the chicken on a plate alongside the buttered penne pasta. Spoon some of the flavorful tomatoes from the bottom of the pan over the penne pasta. Garnish with fresh parsley for a pop of color.
