10 Best Casserole Recipes for Easy Family Dinners

If there is one thing I know how to make, it is a GOOD casserole! These are 10 of my most viral casserole recipes, and let me tell you—they went viral for a reason. They are easy, comforting, ridiculously delicious, and filled with the perfect combinations of flavors. And, of course, I can never just leave well enough alone, so every single one has a little extra Melissa Jo razzle dazzle that takes it over the top.

I made casseroles for my family for YEARS before I ever started sharing recipes online. Before Melissa Jo Real Recipes, I was a teacher and reading specialist, and I was also a busy mom trying to figure out what the heck I was going to feed everybody for dinner. Casseroles were always one of my answers because you can throw everything into one dish, bake it, and feed the whole family.

So whether you need an easy weeknight dinner, something cozy for Sunday dinner, or just want a big pan of comfort food that everybody is actually going to eat, I gathered 10 of my absolute favorites right here. Some are old-school classics, some have an Italian spin, and some are completely Melissa Jo creations—but ALL of them are worth making!

1. Easy French Onion Chicken and Rice Casserole

This casserole is SO GOOD, and it has a little history in my family. When my boys were little, I learned that if I put crispy fried onions on top of a casserole, suddenly everybody wanted to eat it. Funny how that works! Now they are grown and they still devour this stuff.

I use shredded rotisserie chicken and cooked jasmine rice and mix it with cream of chicken with herbs, sour cream, mayonnaise, Lipton Onion Soup Mix, mozzarella, and my secret little splash of Worcestershire sauce. Then I layer provolone over the top and finish the whole thing with crispy fried onions tossed with melted butter and—you guessed it—a little more Worcestershire. Creamy underneath, buttery and crunchy on top, and loaded with French onion flavor.

And if you would rather have noodles instead of rice, you HAVE to try my equally popular Easy French Onion Chicken Casserole. It has that same creamy French onion goodness, but with noodles instead. Honestly, you can’t go wrong with either one.

2. Poor Man’s Casserole

The name might be Poor Man’s Casserole, but there is absolutely nothing poor about the flavor! This one starts with seasoned ground beef and turns into layers of creamy, cheesy, beefy comfort food. I use Tony Chachere’s in my seasoning blend, plus Colby Jack and cheddar, and it ends up somewhere between an old-school casserole and a big pan of beefy pasta goodness.

This is exactly the kind of recipe I love because the ingredients are simple and familiar, but when everything comes together it tastes like SO much more. It is hearty, filling, family friendly and perfect when you want something cozy without getting fancy.

3. Creamy Chicken Tetrazzini

I said it when I originally made this recipe and I stand by it: this is one of the BEST creamy chicken tetrazzinis. I actually had an older Chicken Spaghetti recipe that was similar, and somehow I managed to outdo myself with this one!

The chicken gets cooked in flavorful bouillon broth, and then I cook the spaghetti right in that same broth so we’re not wasting one single drop of flavor. Then comes a silky sauce with Velveeta, sour cream, cream of chicken soup and heavy cream. Add Colby Jack, mozzarella and a golden layer of crushed French fried onions on top, and OH MY GOODNESS. The noodle-to-cheese-to-creamy-sauce ratio is exactly what you want in a casserole.

This is pure family-dinner comfort food and one of those recipes where everybody starts picking at the crispy top before you even get it to the table.

4. Creamy Cheesy Chicken and Rice

If you like your casseroles creamy, cheesy and bubbling when they come out of the oven, this is YOUR recipe.

I use tender rotisserie chicken, yellow rice and fresh broccoli, but the real star is the sauce. Instead of just dumping everything together and hoping for the best, I make a creamy stovetop sauce with Campbell’s Cream of Chicken with Herbs, Cream of Cheddar, half & half, sour cream and freshly shredded cheddar. Then everything gets covered with Colby Jack and an optional buttery Ritz cracker topping.

It’s chicken, rice and broccoli—but with the Melissa Jo treatment. THIS is what I mean when I say a little extra razzle dazzle can turn an ordinary casserole into something everybody asks you to make again.

5. Meatloaf Lasagna

You’ve had meatloaf. You’ve had lasagna. But have you had MEATLOAF LASAGNA?!

This one is completely different from anything else on this list. I layer a savory beefy meatloaf mixture with cheese, mashed potatoes, green onions and bacon. It reminded me of lasagna because of all those delicious layers, except instead of Italian lasagna, think cozy American comfort food on steroids.

And yes, I use a little Lipton Beefy Onion Soup Mix and Worcestershire in the meat mixture because you KNOW I’m going to sneak flavor makers in wherever I can. This is one of those dinners that sounds a little crazy until you make it—and then suddenly it makes PERFECT sense.

6. Vintage Mexican Casserole

This recipe has such a good story behind it. A friend trusted me with her mother’s handmade recipe collection, filled with recipes from years ago when women in her community would exchange their favorites. This Mexican casserole came from that collection, and I knew I had to make it.

The original version used chicken, but naturally I had to put my spin on it and made mine with ground beef. It has taco-seasoned beef, onion, Rotel, cheese, corn and green chiles, and then this incredible cornbread-style topping made with corn muffin mix, eggs and sour cream.

It’s one of those old-school recipes where you look at the combination and think, “Wait…how is this going to work?” And then you taste it and understand EXACTLY why somebody saved the recipe all those years ago.

7. The Best Tuna Casserole

Don’t scroll past this one because you think tuna belongs at lunchtime! I wanted to make a tuna casserole that was actually exciting enough to serve for dinner, and THIS IS IT.

It starts with wide egg noodles and a super creamy sauce made with cream of mushroom, cream of celery, sour cream and evaporated milk. Celery salt is one of my sneaky little ingredients that makes a huge difference. Then comes the tuna and plenty of cheddar cheese. But obviously I couldn’t stop there.

For the topping, I crush up salt-and-vinegar potato chips with butter! You can use another chip if you want, but that little salty, tangy pop against the creamy casserole is SO freaking good. It’s nostalgic tuna casserole with just enough Melissa Jo razzle dazzle to wake the whole thing up.

8. Creamy Chicken Noodle Casserole

One of my most popular recipes has been my creamy chicken noodle soup, so at some point I thought: why don’t I take everything people love about creamy chicken noodle soup and turn it into a CASSEROLE? And that is exactly what happened.

This one uses rotisserie chicken, good old-fashioned egg noodles, mixed vegetables, cream of celery, cream of chicken with herbs, sour cream, half & half and Colby Jack. Then I top it with buttery crushed Ritz crackers because a creamy casserole needs something crunchy on top!

Now, if you love this one, I NEED you to also try my Heavenly Chicken and Rice Casserole. It also uses rotisserie chicken and gives you that same cozy, creamy comfort-food feeling, but it uses rice instead of noodles. It is similar but definitely not the same, and OH MY GOD, it is wildly good. I don’t know which one I love more, so you’re just going to have to make both.

9. Easy Beefy Baked Ziti

Okay, first things first. I am Italian, so would I personally call baked ziti a casserole? NO. It’s baked ziti! But apparently plenty of people put baked ziti in the casserole category, so here you go. I’m not going to fight with Google. LOL!

Whatever you want to call it, this Easy Beefy Baked Ziti belongs on this list because it is one of the easiest, coziest family dinners. It’s made with ground beef, ricotta, mozzarella, Pecorino Romano and plenty of marinara, all baked together until cheesy and bubbly. I originally made it before leaving for a trip so my kids would have a homemade meal waiting for them, which tells you exactly what kind of recipe this is: easy, hearty and perfect for feeding a family.

And since we’re already breaking the casserole rules with Italian food, you might as well try my Lazy Lasagna too. It gives you all that cheesy, saucy lasagna comfort without doing a whole production.

Another one to try is my Meatball Casserole Dinner. If you love Italian-style baked dinners with lots of flavor and very little fuss, add that one to your list too.

10. Million Dollar Spaghetti

Last but CERTAINLY not least is Million Dollar Spaghetti, and there is a reason this one has been such a hit.

This isn’t just spaghetti with some cheese thrown on top. I make a seasoned turkey Bolognese with marinara, peppers, onions, garlic, Tony’s, Italian seasoning and crushed red pepper. THEN I make homemade Alfredo with butter, heavy cream, Parmesan, garlic and more seasoning. The spaghetti gets coated in that creamy Alfredo before the Bolognese goes over the top, and then the entire thing gets covered with cheddar and mozzarella and baked.

So basically we have Alfredo, Bolognese, spaghetti and bubbling cheese all in one pan. THAT is why it’s called Million Dollar Spaghetti. It is saucy, creamy, cheesy, a little zingy and completely over the top—in the best possible way.

They’re easy, they’re comforting, they feed a family, and there are about a million ways to make them. Chicken, beef, rice, noodles, Italian, Mexican, old-school classics—you name it, I’ve probably figured out a way to put it into a baking dish and add something crunchy on top. LOL!

But that’s what makes these recipes mine. I want dinner to be EASY, but easy does not have to mean boring. Give me a few shortcuts, plenty of flavor makers, something creamy, something cheesy and a little razzle dazzle on top, and we are going to MAKE IT!
