Ingredients
  

  • 2 lbs boneless skinless chicken breasts about 3–4, depending on size
  • 1 1/2 cup salsa your favorite — chunky or restaurant style
  • 1 packet taco seasoning or 2 tbsp homemade (divided)
  • 4 oz cream cheese softened
  • 15.25 oz cup canned corn drained well (optional but recommended)
  • 15.2 oz can black beans not drained
  • 1/2 cup diced red onions
  • 2 cup shredded Mexican cheese blend
  • Fresh cilantro chopped
  • Sour cream for topping
  • Optional: sliced jalapeños for heat

Method
 

  1. Preheat oven to 400°F. Lightly grease a baking dish.
  2. Place chicken breasts in the dish and sprinkle with 1 tbsp taco seasoning.
  3. Spread cream cheese over the top of each chicken breast.
  4. Pour salsa over the chicken, letting it run around the sides.
  5. Add the drained corn, fiesta beans, and diced red onions evenly around the chicken.
  6. Sprinkle with 1 tbsp taco seasoning over the corn beans and red onion.
  7. Bake uncovered for 30 to 35 minutes, depending on the thickness of the chicken, or until it reaches 165°F inside.
  8. About half way through the cooking time top with the shredded cheese then continue cooking for the rest of the time.
  9. Remove from oven.
  10. Serve with hot rice, cilantro, and bit of sour cream. Put the beans on the rice as well.
