One-Pot Dirty Rice Dinner

This One-Pot Dirty Rice Dinner is loaded with Italian sausage, ground beef, the Cajun trinity, Creole seasoning, garlic, and perfectly cooked parboiled rice. Everything cooks in one pan for an incredibly flavorful, hearty dinner that feeds the whole family with minimal cleanup.

If this dinner is dirty, then I donโ€™t want to be clean, honey! Now listen, am I Cajun? No. Am I Creole? No. I am Sicilian through and through, but, I can cook up a Cajun-inspired dinner with the best of them!

And THIS ONE. Oh my gosh!!!!!!!

This One-Pot Dirty Rice Dinner has so much flavor packed into one pan that youโ€™re going to wonder how something this easy can taste this good. Iโ€™ve made some other โ€œdirtyโ€ dinners that you guys have gone absolutely crazy for, including my TikTok Viral Dirty Spaghetti, TikTok Viral Dirty Cabbage, and One-Pot Chicken and Dirty Rice. But this version may be my favorite yet.

Weโ€™re using the classic โ€œtrinityโ€ of onion, green bell pepper, and celery, then adding garlic, Italian sausage, ground beef, Tonyโ€™s Creole seasoning, Worcestershire, beef base, tomato paste, chicken bouillon, and rice. But there are a couple of secrets to making this really good. First, use parboiled rice. Second, donโ€™t drain away all that delicious flavor from the meat. And third and probably most important once that lid goes on, leave it alone! Iโ€™m going to show you exactly how I cook the rice because the cooking AND resting time are what give you that gorgeous finished pot of dirty rice.

Pay attention, honey. This is where the magic happens!

What Is Parboiled Rice?

Parboiled rice is rice that has been partially cooked in its husk before being dried and packaged. Despite the name, it isnโ€™t instant rice. I love it for a one-pot dinner like this because the grains tend to stay separate and hold their shape instead of becoming overly soft while theyโ€™re cooking with all of our meat, vegetables, seasonings, and broth.

Melissa Jo Tip: I used 2 cups of parboiled rice, and thatโ€™s what I recommend for the recipe as written because that is exactly how I tested it.

If you substitute another type of rice, the amount of liquid and cooking time may need to be adjusted. Different varieties absorb liquid differently, so for the most reliable result, use the parboiled rice shown here.

I used my favorite Caraway pan because it is wide enough, deep enough, and has an oven safe lid too! It’s nonstick ceramic and wipes clean EASY. I have the navy set that is linked.

Assemble the TRINITY!! (Onion, celery, & green bell peppers)

Use a wooden spoon to break up both meats as it cooks, mixing it right into that seasoned trinity.

DO NOT DRAIN THE FAT. Add in Better Than Bouillon beef base to build that flavor.

Add in tomato paste and Worcestershire sauce.

You will also need to sprinkle in Chicken Bouillon Seasoning.

Stir the parboiled rice into everything and let it sautรฉ for another couple of minutes. You want that rice coated in all those beautiful drippings and seasonings.

Pour in that low sodium chicken broth and pop the lid on.

Do not open the lid!!!!! No peeking. No stirring. Leave it alone! The residual heat and trapped steam will continue doing their thing while the rice finishes absorbing that flavorful liquid.

This is the most versatile pan in my Caraway Cooking Set. It’s wide enough, deep enough, and gosh darn it people like it! (LOL SNL reference) But seriously, it’s nonstick ceramic and wipes clean in seconds. The best!

Melissaโ€™s Tips!

  • Donโ€™t drain away all the fat. The rendered beef and sausage fat is part of the flavor base for this dish. If your particular meat gives off an excessive amount and you want to remove some, thatโ€™s fineโ€”but leave approximately 4 tablespoons behind.

  • Use low-sodium chicken stock. Weโ€™re getting salt from several other ingredients, so low-sodium stock gives you much better control over the final seasoning.
  • Donโ€™t add extra salt until the end. Tonyโ€™s, bouillon, beef base, sausage, and Worcestershire all bring saltiness. Taste it AFTER itโ€™s finished before adding anything else.
  • Toast your rice. Donโ€™t skip those couple of minutes where the rice cooks in the meat mixture before adding the stock. Youโ€™re coating those grains with all that incredible flavor.
  • Keep the lid closed. I know you want to look. Donโ€™t! Steam is part of the cooking process. Every time you lift that lid, youโ€™re releasing it.
  • Donโ€™t skip the 12-minute rest. The burner may be off, but your dinner isnโ€™t finished yet. Keep that lid closed and give the rice its full resting time.
  • Use the right pan. You need something deep enough to comfortably hold the entire dinner and preferably a tight-fitting lid.

What is dirty rice?

Dirty rice is traditionally associated with Louisiana Creole and Cajun cooking and gets its name from the darker or โ€œdirtyโ€ appearance the rice takes on as it cooks with meat, seasonings, and aromatics.

What is the Cajun trinity?

The โ€œtrinityโ€ refers toย onion, celery, and bell pepper, an aromatic base widely used in Louisiana cooking. In this recipe, I use one small yellow onion, one green bell pepper, and three celery stalks.

Is this an authentic Cajun or Creole dirty rice recipe?

No, and Iโ€™m not going to pretend it is! Iโ€™m Sicilian.ย This is my own Cajun/Creole-inspired one-pot dinner using flavors and techniques I love. Traditional Louisiana dirty rice can include ingredients such as chicken livers or giblets, which I donโ€™t use in this recipe.

Is One-Pot Dirty Rice spicy?

Tonyโ€™s Creole seasoning adds plenty of savory Creole-style flavor and some heat, but the overall spice level will also depend on the Italian sausage you choose. Use mild Italian sausage for a gentler version or hot Italian sausage if your family likes more heat.

This easyย One-Pot Dirty Rice Dinnerย combines ground beef, Italian sausage, onion, bell pepper, celery, garlic, Creole seasoning, and parboiled rice in one incredibly flavorful skillet. The secret is cooking the rice covered on low and then letting it rest off the heatโ€”without lifting that lid!

  1. Add 1โ€“2 teaspoons oil to a large, deep skillet with a tight-fitting lid over medium to medium-low heat.
  2. Add onion, green bell pepper, celery, Tonyโ€™s Creole seasoning, garlic powder, onion powder, and cracked black pepper. Sautรฉ until the vegetables begin to soften and the onion becomes translucent and slightly golden.
  3. Add the minced garlic and continue cooking for about 5 minutes, watching carefully so the garlic doesnโ€™t burn.
  4. Add the Italian sausage and ground beef. Break up the meat with a wooden spoon and cook until browned and cooked through.
  5. Do not drain the rendered fat. If there is an excessive amount and you choose to remove some, leave approximately 4 tablespoons in the skillet.
  6. Add Worcestershire sauce, Better Than Bouillon beef base, and tomato paste. Stir thoroughly and cook briefly over medium-low heat.
  7. Add the parboiled rice. Stir it into the meat mixture and sautรฉ for about 2 minutes, allowing the rice to become coated in the seasonings and drippings.
  8. Sprinkle in the chicken bouillon powder.
  9. Pour in the low-sodium chicken stock and stir.
  10. Cover the skillet and increase the heat until the mixture comes to a full boil.
  11. As soon as it boils, remove the lid, give everything one good stir, cover again, and immediately reduce the heat to LOW.
  12. Cook covered for 20 minutes. Do not lift the lid.
  13. After 20 minutes, turn the heat completely OFF but DO NOT remove the lid.
  14. Leave the skillet covered and undisturbed for another 12 minutes.
  15. Remove the lid, stir and fluff the dirty rice, taste for seasoning, and add salt only if needed.
  16. Serve hot and flip the flip out! ๐Ÿ˜‚

Cool leftovers promptly and refrigerate them in an airtight container. Reheat portions until piping hot throughout. Because this dish contains cooked rice and meat, donโ€™t leave leftovers sitting at room temperature for extended periods. If freezing: once completely cooled, portion the dirty rice into freezer-safe containers and freeze. Thaw it safely in the refrigerator before reheating thoroughly.
