Oven Fried Fish Fry

Melissa Jo

  • 2-4 Cod loins about 1/2 inch thick or haddock, pollock, cat fish, etc.
  • 1/2 cup milk
  • 1/2 cup all purpose flour
  • 1/2-1 cup of Panko breadcrumbs
  • 1/4 cup Pecorino Romano grated
  • 1 tbsp. of lemon pepper seasoning
  • 1 tsp. of garlic powder
  • 1/2 tsp. of paprika
  • 1 tsp. of dried parsley flakes
  • 1/2 stick of butter salted
  • black pepper to taste

  • thaw fish if frozen and pat your fish dry and cut them into serving size pieces if needed
  • grease a baking dish with butter
  • melt the rest of the butter in a shallow bowl
  • pour milk into a shallow dish
  • add flour to a plate and season with black pepper
  • add panko to a plate and season with all of the above listed seasonings as well as the pecorino Romano grated cheese
  • Coat the fish in this order:
  • butter
  • milk
  • flour
  • milk again
  • panko (press the fish into the panko so it sticks well
  • Place fish in greased baking dish
  • bake uncovered at 450 for 12-15 minutes
  • broil for about 1-2 minutes or until the crust is browned to your liking

What you will need:

  • Boneless cod loins: I prefer cod, but you could use any white fish such as: pollock or haddock.
  • Fresh or frozen cod loins: I used frozen pollock in my recipe, sometimes it’s even better because the fish is frozen by the fisherman right on the boat. You never really know how fresh the fish is in the grocery store.
  • Tartar sauce: You can certainly make your own, but here’s my favorite from the grocery store: https://amzn.to/2QwTfts
  • Tarter Sauce Recipe- Combine and mix:
    • 1/2 cup mayo
    • 3 tsp. of sweet relish
    • 1 tsp of yellow mustard
    • tbsp. of lemon juice
    • salt & pepper to taste
