Ingredients
  

  • 1 – 1.5 lbs ground chuck
  • 2 large carrots sliced
  • 6-7 garlic cloves chopped
  • 2 tbsp tomato paste
  • 1/4 of a large red onion chopped
  • 1 tbsp olive oil
  • 4 shakes worcestershire sauce
  • 8 oz baby bella mushrooms
  • 8 slices deli provolone divided
  • 3/4 cup beef broth
  • 1/4 cup chopped fresh parsley
  • 1 tbsp complete seasoning
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 32 oz pack of Bob Evans mashed potatoes

Instructions
 

  • In a pan add olive oil and sliced carrots. Sauté the carrots for 5 minutes, then cover the pan with the lid, and let them cook for another 3 minutes.
  • In a bowl add ground chuck, red onion, garlic, parsley, worcestershire, baby Bella mushrooms, and salt & pepper.
  • Add all the contents of the bowl to the pan and sauté everything together for about 5 minutes until the meat is almost browned.
  • Then add tomato paste, beef broth, garlic powder, & complete seasoning.
  • Give that a stir, bring the pan to a boil, then lower it to a simmer, and let that simmer until the liquid has reduced by half.
  • Add the meat mixture to a pie plate using a slotted spoon, so the excess liquid can drip out. Cube up 4 slices of provolone cheese and sprinkle the cheese cubes evenly over the meat.
  • Spread the mashed potatoes over the top and garnish with fresh parsley.
  • Cube up 4 more slices of provolone cheese and sprinkle the cheese cubes over the top as well.
  • Bake at 375°F for 30 minutes. Enjoy!
