EASY BEST Artichoke Dip
The BEST artichoke dip is quick, easy, requires just 4 ingredients, and is superbly delicious — and this, my friends, is exactly that! If you’re looking for a quick appetizer to serve for company, or something delicious to bring to a party or potluck, THIS is your dip. 🧀
No special seasonings, no long shopping list, no stress: artichoke hearts, mayonnaise, whole milk mozzarella, and Pecorino Romano, baked until golden and bubbly with lots of cracked black pepper. It comes together in ten minutes of prep, and I promise you — the dish comes home EMPTY every single time. Four ingredients. Let’s do this!

FAQs
Can I make this ahead of time? Yes! Prepare it, cover, and refrigerate. When you’re ready, just remove it from the refrigerator, uncover, and pop it in the oven — add about 5 extra minutes since it’s going in cold.
Water-packed or marinated artichokes? Regular water-packed quartered artichoke hearts. Save the marinated ones for my Crockpot Spinach Artichoke Dip, where their extra flavor shines.

Why doesn’t this need salt? The Pecorino Romano is naturally salty and seasons the whole dip. Taste before you even think about adding salt.
Can I add spinach? You can — but at that point, let me hand you the exact recipe: my BEST Spinach Artichoke Dip is this dip’s big sister and she’s ready for you.
What do I serve it with? Mountain bread from Publix is my ride or die. Hawaiian rolls, pita bread, pita chips, crostini, or even crackers all work — and it’s keto-friendly with veggies or pork rinds.
Melissa’s Tips!!
- Artichokes: Buy 2 cans of quartered artichoke hearts and instead of draining and chopping, throw into a colander and squeeze them of all of the juice. Let it drip down into a bowl or the sink. This will also chop your artichokes perfectly. See the video!
- Cheese: For best results, shred the mozzarella cheese and grate the Pecorino Romano. As you see in the video I did neither. LOL But at least if you buy shredded mozzarella; but WHOLE MILK mozzarella.
- Blot: Blot the top of the appetizer with a paper towel after it’s done baking in the oven. This will get rid of the excess oil and make for a delicious creamy dip!
- Serve with: My favorite is to serve with mountain bread from Publix. If you can’t find try Hawaiian Rolls, pita bread, or pita chips

Method
- chop and drain the artichokes (make sure there is NO moisture)
- combine all of the ingredients and mix
- add black pepper
- Bake at 350 for 30 minutes
- Broil for 1 minute
- blot any excess oil off the top
- SERVE!
