Instructions

  • In a mixing bowl add yellow cake mix and melted butter. Mix that together using a rubber spatula until it’s combined and becomes a dough texture. Grease a 8×8 baking dish and add in half of that cake mix butter mixture (save the other half for the topping). Press it down in the baking dish so it is in an even layer.
  • In a large measuring cup or bowl, add in the strawberry pie filling and the partially thawed sliced strawberries. Mix that together until incorporated and add that strawberry filling mixture evenly into the baking dish on top of the cake mix dough layer.
  • Now time to make the cheesecake filling. In a large mixing bowl, add in softened cream cheese, egg, sugar, and Mexican vanilla extract. Beat that together using an electric hand mixer until fully combined and smooth. Add that cheesecake filling over top of the layer of strawberry filling in the baking dish. Smooth it out so it is in an even layer.
  • Lastly, take the rest of the cake mix butter mixture, crumble it up with your fingers, and sprinkle the crumble evenly over top of the cheesecake layer. Bake it in the oven at 350°F for 40 – 45 minutes. Once it is done let it cool for at least 40 minutes before cutting into it. Serve with some cool whip, whipped cream, or ice cream. Enjoy!
