Meatball Casserole Dinner


Meatball Casserole Dinner, why is it a dinner you ask? Because I added rice into my meatballs and let me tell you! This is going to be an absolute family favorite! And so easy, cheesy, and pleasy!! I love the ease in making this recipe and how delicious each bite turns out! All you need is some affordable ingredients like ground beef, onion, garlic, Italian breadcrumbs, and a few extra secret ingredients to make them better than your average ol’ meatball, but a full dinner! But, add a side salad to make sure you get in a few more vegetables! Let’s make meatball casserole!!

Meatball Casserole Dinner
he Meatball Casserole Dinner, enriched with rice, is an easy and flavorful family favorite. Made with affordable ingredients like ground beef, onion, garlic, and Italian breadcrumbs, it offers a simple and satisfying meal. The addition of secret ingredients enhances its taste, and pairing it with a side salad adds extra vegetables to the dish.
Ingredients
- 2 lbs. ground beef
- 7-8 cloves of chopped garlic
- 3/4 cup Italian breadcrumbs
- 1 small chopped onion
- 1/4 cup chopped fresh parsley & more for garnish
- 1/2 cup grated pecorino romano cheese & more for garnish
- 2 eggs
- 2 cups of cooked long or medium grain white rice
- 1/8 of a cup of chopped fresh basil
- 1/2 cup of cubed fresh mozzarella
- 1 tsp of salt 1 tsp. of cracked black pepper
- 1/2 tsp of crushed red pepper flakes
- about 20-25 oz. of marinara sauce
- 2 cups of freshly shredded mozzarella
- garnish: cracked black pepper and chopped fresh parsley
- Nonstick spray or butter to grease the casserole dish
Instructions
- Preheat the oven to 375 degrees F
- To a large bowl combine the ground beef, onion, garlic, cubed fresh mozzarella cheese, parsley, basil, cooked white rice, breadcrumbs, pecorino Romano, eggs, crushed red pepper, and salt & pepper.
- Mix with your hands, but just until combined. Don’t over mix!
- Roll them into 1 & 1/2 inch meatballs and place into a greased casserole dish.
- Top the meatballs with the marinara sauce. Really pile it on! They should be swimming in it!
- Top with freshly shredded mozzarella cheese and Pecorino Romano
- garnish with cracked black pepper and fresh parlsey
- Bake covered tightly at 375 degrees F. for 25-30 minutes.
- Remove from the oven and uncover (remove the foil)
- Put the meatball casserole back into the oven uncovered at the same temperature for another 15 minutes or until the cheese is melty and bubbly
- Serve with a garden salad and enjoy!
