Melissa Jo’s Family Lasagna
This is how I was taught to make lasagna from my Grandma Jo. Usually for holidays we start with an Italian first course. And on Christmas it’s lasagna! Then we transition into a more traditional meal with prime rib, potatoes, and vegetables! But, guess what? This is our favorite and there’s never even a slice left. All the other courses are great, but no comparison! I hope you love my recipe! Here’s my family lasagna recipe!

Ingredients
Method
- Bring a large pot of water to boil and heavily salt the water. Then, add the lasagna and boil about 1 minute before aldente according to the back of the box or package.
- Mix together all of the ingredients for the ricotta mixture listed above. Mix it all together until it’s a light pink color.
- Shred the fresh mozzarella
- Now we layer in a large Lasagna Baking Dish
- Layer 1: meat sauce: cover the bottom of the pan with a think layer
- Layer 2: Lasagna
- Layer 3: Ricotta Mixture
- Layer 4: fresh mozzarella
- Layer 5: Meat sauce again! and repeat and repeat and layer it up!
- Last Layer: Sauce, mozzarella, pecorino romano, fresh parsley, and black pepper
- Bake at 350 degrees Fahrenheit covered with foil for about 45 minutes on the middle rack of the oven.
- Remove the cover and bake at same temperature or until it’s browned and bubbly.
- Let the lasagna rest at least 30 minutes before cutting and serving! ENJOY!

Notes
- I make lasagna with meat sauce. here’s a video tutorial:
- Add about 1/2 cup of the meat sauce to the ricotta mixture. Keep adding until the mixture becomes pink.
- Boil the lasagna 1 minute before it reaches aldente according to the back of the package of lasagna you are using.
- VERY IMPORTANT: Let the lasagna rest at least 30 minutes before serving so it sets up!
