This is how I was taught to make lasagna from my Grandma Jo. Usually for holidays we start with an Italian first course. And on Christmas it’s lasagna! Then we transition into a more traditional meal with prime rib, potatoes, and vegetables! But, guess what? This is our favorite and there’s never even a slice left. All the other courses are great, but no comparison! I hope you love my recipe! Here’s my family lasagna recipe!

Melissa Jo’s Family Lasagna Recipe

Ingredients
  

  • 3 lbs. of ricotta
  • 1/2 cup of meat sauce
  • a large bunch of Italian Fresh chopped reserve some for the garnish at the top
  • 2 large egg yolks
  • about 6 tbsp. of freshly grated Pecorino Romano Cheese
  • 1-2 tbsp. of cracked black pepper & add about 1 tsp. of salt
  • 3-4 tbsp. of milk
  • 3-4 cups of freshly grated mozzarella
  • about 2 lbs. of lasagna maybe a little less, but make both boxes in case some break
  • 1 cup of freshly grated Pecorino Romano cheese
  • about 2 qts. of meat sauce
  • Ricotta mixture see above
  • freshly chopped Italian parsley and cracked black pepper

Method
 

  1. Bring a large pot of water to boil and heavily salt the water. Then, add the lasagna and boil about 1 minute before aldente according to the back of the box or package.
  2. Mix together all of the ingredients for the ricotta mixture listed above. Mix it all together until it’s a light pink color.
  3. Shred the fresh mozzarella
  4. Now we layer in a large Lasagna Baking Dish
  5. Layer 1: meat sauce: cover the bottom of the pan with a think layer
  6. Layer 2: Lasagna
  7. Layer 3: Ricotta Mixture
  8. Layer 4: fresh mozzarella
  9. Layer 5: Meat sauce again! and repeat and repeat and layer it up!
  10. Last Layer: Sauce, mozzarella, pecorino romano, fresh parsley, and black pepper
  11. Bake at 350 degrees Fahrenheit covered with foil for about 45 minutes on the middle rack of the oven.
  12. Remove the cover and bake at same temperature or until it’s browned and bubbly.
  13. Let the lasagna rest at least 30 minutes before cutting and serving! ENJOY!

Notes

  • I make lasagna with meat sauce. here’s a video tutorial:
  • Add about 1/2 cup of the meat sauce to the ricotta mixture. Keep adding until the mixture becomes pink.
  • Boil the lasagna 1 minute before it reaches aldente according to the back of the package of lasagna you are using.
  • VERY IMPORTANT: Let the lasagna rest at least 30 minutes before serving so it sets up!
