One Pot Sausage & Rice Recipe
Ingredients
- 5 links of Italian sausage sliced into 1/ 2inch chunks
- 2 tbsp olive oil
- 2 cups uncooked long or medium grain white rice
- 4 carrots chopped
- 1 red bell pepper diced
- 1 onion diced
- 6 cloves of garlic chopped
- 2 tbsp tomato paste
- 3 cups water
- 1/4 tsp crushed red pepper
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley chopped, for garnish
Instructions
- Start by slicing those succulent Italian sausages into hearty 1/2-inch chunks –
- Grab a skillet with high sides and heat up 2 tbsp of olive oil over medium heat. Toss in the sausage slices and sauté them until they’re a tempting shade of golden. The sizzling begins!
- Push the sausage slices to the edges of the pan, making room in the center. Add in your diced onion, chopped carrots, diced red bell pepper, and those garlicky bits of joy (6 cloves, to be precise). Sprinkle in the crushed red pepper, garlic powder, salt, and pepper. Mix it all up and sauté until everything is gloriously golden and aromatic.
- It’s tomato time! Add 2 tbsp of tomato paste to the skillet and sauté it with the sausage and veggie medley for about 2 minutes. Those caramelized flavors are developing a happy dance in that pan!
- Then, add 2 cups of long grain or medium grain uncooked rice and sauté with the rest of the contents for about 2-3 minutes before adding water.
