Oven Baked Roasted Tomato Rice Recipe

Ingredients
  

  • 2 pints of cherry tomatoes
  • 5 cloves of chopped garlic
  • 2 sliced shallots
  • 6-7 leaves of fresh basil roughly chopped
  • Kosher salt and cracked black pepper to taste
  • 2 tablespoons of olive oil
  • 1 and a 1/2 cups of jasmine rice
  • 2.5 cups chicken or vegetable stock
  • Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a 9×13 baking dish, add the cherry tomatoes, chopped garlic, sliced shallots, fresh basil, kosher salt, cracked black pepper, and olive oil. Give it a gentle toss to ensure everything is well combined.
  • Place the baking dish in the preheated oven and let the ingredients roast for about 50-60 minutes or until the cherry tomatoes turn golden and release their natural juices.
  • Once the roasted tomatoes are ready, remove the baking dish from the oven. Carefully add the jasmine rice and chicken or vegetable stock to the dish, ensuring the rice is evenly distributed. Mix everything together.
  • Cover the baking dish tightly with foil to lock in all the flavors and allow the rice to absorb the liquid. Reduce the oven temperature to 375 degrees Fahrenheit and place the dish back in the oven.
  • Bake the tomato rice mixture for approximately 25 minutes or until the rice is tender and has absorbed all the delicious flavors.
  • Once cooked, remove the baking dish from the oven and fluff up the rice with a fork. This step helps to separate the grains and distribute the flavors evenly.
  • Garnish with fresh parsley for an added touch of freshness and vibrant color.
