After all, I did my research and found that in 2024, Americans spent 50% more on Mother’s Day than on Father’s Day. But dads play an important role too, and this year, we’re showing our appreciation with something sweet: my Sweet Cream Strawberry Pancake breakfast. It’s the most affordable, delicious breakfast-in-bed your dad will ever have. We’re starting with Sweet Cream Pioneer Pancake Mix, adding in a handful of fresh, ripe strawberries, a few pantry staples, and topping it off with fluffy whipped cream mixed with chopped berries. It’s easy. It’s mouthwatering. And it’s guaranteed to make Dad feel like a king this Father’s Day.

Ingredients
  

  • – 2 pouches 12 oz total Pioneer Sweet Cream Baking, Waffle & Pancake Mix
  • – 1 cup milk or buttermilk
  • – 2 large eggs
  • – 4 Tbsp melted butter or oil
  • – 1/3 cup sugar
  • – 1 tsp vanilla extract
  • – 1 pound of chopped fresh strawberries divided
for serving
  • – Fresh whipped cream
  • – Sliced strawberries
  • Ingredients for fresh whipped cream:
  • 2 cups heavy cream
  • Two tbsp of powdered sugar
  • 2 tsp of vanilla extract

Method
 

  1. Preheat oven to 350°F. Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the Pioneer mix, sugar, eggs, milk, melted butter, vanilla, and lemon zest (if using) until smooth.
  3. Gently fold in the chopped strawberries.
  4. Pour the batter into the prepared dish and smooth the top.
  5. Bake for 30–35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  6. Let cool slightly. Slice into squares or bars.
  7. Top with fresh whipped cream, sliced strawberries, and a dusting of powdered sugar. Serve warm or chilled.
