Summer is finally here, so let the quick and easy summer recipes prevail. I took a trip to Trader Joe’s to find the perfect premade ingredients to couple with fresh ingredients and make a quick and easily Trader Joe’s Tomato Feta Pasta Bake. I must admit that I got the idea from the viral Lobster Pasta made with Trader Joe’s Lobster Bisque Soup. So I thought to myself I’m going to find another soup and do the same thing and give it a Mediterranean flare. Income my Trader Joe’s Tomato Feta Pasta Bake. I used most ingredients you can easily find at Trader Joe’s and I added pictures so you can find them easily in the blog. I think you’re going to be as floored as I was after making this recipe. It took me all of 15 minutes to make and 25 minutes to bake let’s make it.

Ingredients
  

  • 1 container Trader Joe’s Tomato Feta Soup 20 oz
  • 2 packages cheese tortellini about 20 oz, fresh or frozen
  • ¾ cup heavy cream or half & half
  • 6 oz whole milk mozzarella cheese freshly shredded
  • 1 oz crumbled feta cheese
  • Optional add-ins:
  • 2 oz chopped baby spinach
  • 2 oz chopped sun-dried tomatoes in oil or dry-packed
  • Optional garnish:
  • Fresh basil or parsley
  • Drizzle of balsamic glaze

Instructions
 

  • Preheat the oven to 375°F. [Bakes in a 8×8 Dish]
  • Boil the tortellini according to the package instructions.
  • Pour 1/4 cup of the Tomato Feta Soup on the baking dish and spread it out
  • Pour the drained Tortellini into the baking dish
  • Pour the Tomato Feta Soup directly over the cooked tortellini.
  • Pour the heavy cream over the soup and Tortellini and mix until combined
  • Top with chopped fresh baby spinach, freshly shredded mozzarella cheese, sun-dried tomatoes, fresh basil and cracked black pepper.
  • Top with crumbled feta and bake uncovered for 25-30 minutes, or until bubbly and golden around the edges.
