This is my absolute favorite way to make a Boston butt roast pork roast! Crock pot Pork roast is an easy set it and forget it recipe that tastes so good the family will be looking FORWARD to a crock pot meal! The best part according to my kids is spooning the juices from the crockpot over the rice and the shredded pork on top! It’s truly so delicious and you hardly need any ingredients and most of them are likely in your kitchen as we speak! Let’s make it!

crock pot Boston butt roast

Crock Pot Pork Roast Roast

Melissa Jo

Ingredients

  • 2-3 lb. Boston Butt Roast
  • 2 lemons
  • 1 onion
  • 1 tbsp. of olive oil
  • 8-10 cloves of garlic sliced into slivers
  • 2 tbsp. of Adobo seasoning
  • 1 packet of Sazon seasoning optional but delicious
  • lots of cracked black pepper and a pinch of salt

Instructions

  • Place Boston Butt Roast in the crock pot and make sure the pork is patted dry of any moisture and room temperature before prepping. Place the Boston butt roast and cook it fatty side up.
  • Cut little holes in the roast with a knife all over the front and back of the roast. Nestle the slivers of garlic into the holes you created and into any of the nooks and crannies already in the roast.
  • Add half of the seasoning and olive oil on one side of the roast and massage in. Then, flip over the roast fatty side up and season the second side and massage it all in.
  • Slice up one onion and scatter on top. (the fatty side should be facing up)
  • Squeeze over the juice of 1 lemon and then quarter another lemon and add directly into the crock pot.
  • Cover and set the crock pot to high and cook about 5-6 hours or until he roast is very moist and almost falls apart.
  • Serve this roast up over white rice and spoon over the juices on top of the rice and the pork. Serve with a side salad night one! Enjoy!

Notes

  • The trick to making a juicy and moist Boston Butt Roast is to make sure it’s room temperature and patted dry of any moisture before even prepping.
  • Flip the Boston Butt Roast fatty side in the crockpot. This way the fat seeps down into the meat for the juiciest results.
  • I used adobo seasoning in this recipe, but sometimes I add a little packet of Sazon and it’s SO good!
