Creamy Spinach Shrimp Pasta

This creamy spinach shrimp pasta is one of my favorite pasta dishes that I absolutely love!! This dish combines delicious shrimp with garlic, shallot, salt, and pepper, that creates the best flavors. Then it's time to make the most unbelievable creamy sauce that is made with heavy cream, white wine, pecorino romano, spinach, and lemon. The shrimp pairs so perfectly with the spinach and lemon it's unreal! Ingredients
  

  • 1 lb shrimp peeled & deveined
  • 1 lb spaghetti
  • 8 garlic cloves chopped
  • 1 shallot sliced
  • 1/4 cup fresh parsley chopped
  • 1 & 1/2 cup heavy cream
  • 5 oz spinach roughly chopped
  • 1/2 cup grated pecorino romano
  • 2/3 cup white wine
  • 1 lemon zest & juice
  • 3-4 tbsp olive oil
  • Shake of crushed red pepper flakes
  • Salt & pepper to taste
  • Garnish with pecorino romano & fresh basil

Instructions
 

  • Pat dry the peeled deveined shrimp and season them with salt & pepper.
  • In a pan with olive oil, add in shallot, garlic, and salt & pepper. Sauté until fragrant and golden on medium-high heat.
  • Add seasoned shrimp and butter. Let that sauté until the shrimp starts to turn pink
  • Then add in lemon zest, lemon juice, shake of crushed red pepper flakes, and wine wine. Let that sauté for 2-3 minutes so the alcohol can burn out.
  • Bring a pot of water to boil, salt it, add in spaghetti, and cook until al dente.
  • To the pan add fresh parsley, spinach, heavy cream, and pecorino romano. Stir everything together and let that simmer for 2-3 minutes to thicken.
  • Add the cooked spaghetti to the pan letting some pasta water drip in. Toss the spaghetti around in the sauce so its fully coated.
  • Garnish with fresh basil & more pecorino romano. Enjoy!!!
