This dish was inspired from my son, He is a huge fan of jalapeno poppers and I decided I wanted to make him something that he would absolutely LOVE! So I decided to make these Jalapeno Popper Stuffed Chicken! It was super easy to make and if you’re a fan of spicy food you will absolutely love this dish. It’s not overly spicy but it has that perfect kick you look for in every dish.
This spread was so delicious and paired so perfectly with the chicken. It’s made with pepper jack cheese, Colby jack cheese, jalapeno’s, cream cheese, and Italian parsley. This really brings the flavor to the dish and melts perfectly in the oven to have that beautiful cheese pull.

Jalapeno Popper Stuffed Chicken
Ingredients
- 8 oz block of softened cream cheese
- 2 jalapenos
- 4.5 oz can of green chiles
- handful of chopped Italian parsley
- 4 oz of pepper jack cheese
- 2 oz of colby jack cheese
- salt, pepper, garlic powder
- 3 chicken breasts
Instructions
- Firstly, combine the block of cream cheese, jalapeños seeded, green chiles, Italian parsley, and cheeses
- Then, butterfly your chicken breasts and lay them on a greased baking dish
- Spread the cream cheese mixture overtop the chicken
- Sprinkle salt, pepper, and garlic powder on the chicken
- Shred more colby jack on the chicken
- Finally, bake it at 400 degrees for 30 minutes
Notes
- Butterfly your chicken breasts; slice them in half lengthwise
- Make sure your chicken is room temperature and patted dry of any moisture
