Most likely you are here because you watched my Crockpot Mojo Pork recipe video, so I hope you made it and I hope you made a lot of it because we are going to turn that fresh and delicious Crockpot Mojo Pork into Pigs in a Potato! Whenever I made my mojo pork I was sure to pick the largest boston butt roast I could find because I love to turn my leftovers into another masterpiece of a dinner, and this is exactly that. We’re going to take that leftover mojo pork, shred it up, smother it in BBQ sauce, and add it on top of a fluffy garnished potato. Ingredients
  

  • 4 russet potatoes
  • 1 tsp olive oil on each potato
  • Sprinkle of salt on each potato
  • Mojo Pork shredded

  • Preheat your oven to 400°F. Line a baking sheet with aluminum foil and place a baking rack on top of the aluminum foil. Take your potatoes, stab them with a fork, rub them each with olive oil, and sprinkle salt over them. Place the potatoes on the baking rack and bake them in the oven for about an hour.
  • Now time to assemble the pigs in a potato! Once the potatoes are done, slice them down the middle about ¾ of the way to open them up. Right after you cut open the potatoes add in the sliced butter and shredded cheese, so it can melt. Sprinkle over some cracked black pepper. Next, mix together the fresh coleslaw mix and coleslaw dressing, and add the coleslaw over the top along with some dill pickle chips. Then, mix the shredded mojo pork with some bbq sauce, and add a heaping scoop of that delicious bbq pork on top of the potato. Lastly, lay some sliced red onions over top of the pork. Serve and enjoy!
