Zesty Italian BFC ๐ฎ๐น

If you have never heard of BFC you are in for quite the treat! BFC is an acronym that I made up to describe my absolute favorite way to make chicken in the oven. Crunchy and crispy like fried chicken, but no deep frying involved. In fact, I’ve already made two recipes that both went viral: Italian BFC and Lemon Pepper BFC. So, I decided to make another variation that’s actually even easier and if you can believe it even tastier! My method is nearly the same, but I have a secret weapon for this recipe that actually made my son sniff the moment he walked in the door a trail all the way to the oven! He’s waiting on bated breath for me to finish this meal and film the ending so he can eat it! I used a packet of Good Seasons zesty Italian dressing mix and let me just tell you something, my house has quite possibly never smelt any better! This chicken is juicy in the middle, crispy and crunchy all around, and guess what no deep frying involved, all I did was pop it in the oven. Are you ready? Let’s make it!

You certainly can! Click Here for the link to a spray bottle I like to use to spray oil onto food. This allows you to still get that crispy chicken while also being concious of how much oil you are using.
Although I don’t think this recipe is too spicy, it may be a tiny bit zesty for some, so you can just use one packet of zesty Italian dressing mix. Half in the breadcrumbs and the other half in the chicken.

Zesty Italian BFC
Ingredients
- 2.5 lbs bone in skin on chicken thighs room temperature & patted dry
- 2 lbs chicken drumsticks
- 2 eggs
- 2 packets of zesty italian dressing mix divided
- 2 tbsp dried rosemary
- ยผ cup chopped fresh parsley
- 1 tsp cracked black pepper
- 2 ยฝ cups plain panko breadcrumbs
- 2 cups seasoned panko breadcrumbs
- 3 oz grated parmesan
- ยผ cup olive oil divided
Instructions
- To a large bowl add in chicken thighs, chicken drumsticks, eggs, 1 packet zesty italian dressing mix, dried rosemary, chopped fresh parsley, and cracked black pepper. Mix that together using your hands until everything is incorporated. Set that aside to marinate for at least 30 minutes.
- In a large ziploc bag, add in plain breadcrumbs, seasoned breadcrumbs, 1 packet zesty italian dressing mix, and grated parmesan. Close the ziploc bag and shake that up to combine. Set it aside.
- Line a baking sheet with aluminum foil and place a baking rack on top of it. The baking rack is key to getting the chicken crispy on both sides.
- After your chicken is done marinating, take a piece of chicken and add it into the bag with the breadcrumbs (I did 3 pieces of chicken at a time). Close the ziploc bag and shake that up so the chicken can get fully coated in the breadcrumb mixture. Once it’s coated in the breadcrumbs, set it on the baking sheet with the rack (if there’s some empty spots on the chicken press some more breadcrumbs on it). Save the bag with the leftover breadcrumbs for later.
- Once all the pieces of chicken are coated in the breadcrumbs and on the baking rack, drizzle ABOUT an 1/8 cup (or more) of olive oil over top of the chicken. Now transfer the chicken into the oven at 425ยฐF and bake it for 1 hour. Once it's been 40 minutes, flip each piece of chicken (if some of the breading came off, add more from the bag you saved), drizzle ABOUT another 1/8 cup (or more) of oil over that side, and let that bake for the remaining 20 minutes. Enjoy!

Notes
- If you want it less zesty you can use 1 packet of zesty italian dressing mix total instead of 2, half in the raw chicken and half in the breadcrumb mixture.

I made this dish the other night with some bone-in skin on chicken thighs and some boneless skinless chicken thighs (I just adjusted the cooking time) and they both were delicious. Awesome recipe! Will definitely be making again.

I know boneless/skinless breasts wouldnโt be the sameโฆbut any recommendations to alter this recipe to use them?
About 1 inch thick chicken breasts! Bake at 400 about 20-25 minutes! ensure the internal temperature reaches 165ยฐF
