Chicken Ranch Sandwiches

Melissa Jo

  • 4 chicken cutlets
  • 1 cup panko bread crumbs
  • 3/4 cup Wondra flour
  • 3/4 cup Tony’s Creole seasoing
  • 2 eggs
  • salt & pepper
  • 2 tbsp Pecorino Romano Cheese
  • 3 tbsp hot sauce as much as you want
  • 2 tbsp canola or vegetable oil
  • 1 tbsp. of butter
  • hamburger buns
  • cheese I used monterey jack..but use whatever
  • dill pickle chips
  • hidden valley ranch seasoning
  • 2-3 tbsp. hidden valley ranch dressing

  • prepare your egg wash: 2 eggs and salt & pepper, hot sauce (whisk)
  • prepare the flour: add the Wondra and season with 1 tbsp. of hidden valley ranch seasoning & 1 tsp. of Tony’s Creole
  • prepare breadcrumbs: add the panko and 1 tbsp. of hidden valley ranch seasoning & 1 tsp. of Tony’s Creole
  • season the chicken cutlets with a light sprinkle of Tony’s Creole on both sides of the chicken
  • dredge the chicken cutlets in this order: (shake off excess as you dredge into each plate)
  • flour
  • egg wash
  • bread crumbs
  • saute the chicken in a skillet with vegetable oil & butter at about medium-medium high heat (don’t mess with the chicken let it brown)
  • broil the hamburger buns (butter the bottom buns) for a minute or until golden
  • Then, set the top buns aside and add the chicken and cheese to the bottom buns
  • Pop back into the oven and broil about 1 minute or until the cheese melts
  • Top the sandwich with your favorite fixings, or do what I do! Dill pickle chips & more ranch dressing
  • Devour!!!

  • Flour: You can use all purpose flour, but I use Wondra. It’s the absolute best flour for a lightly breaded, crispy finish. you simply can’t mess up your meal with this flour! Wondra:
  • Cookware: All you need is a great skillet with high sides. Here’s my favorite that goes stovetop to oven:
  • Chicken: Buy chicken cutlets since they are already nice and thin. If you can’t find them, buy chicken breasts and butterfly, then pound thin. You need your chicken to be nice and thin for this recipe so the cooking time works. Just like making cutlets; the thinner the better!
  • The best seasoning in the whole world is this right here: You need the Tony’s Creole for this recipe to be as delicious as mine!
