Mediterranean Stuffed Chicken Thighs 🍗

The most common way to stuff chicken is by using chicken breasts and I have plenty of delicious recipes featuring that method that I will link within this blog. However, in my opinion the most delicious way to stuff chicken is by stuffing chicken thighs.

Chicken thighs are such a staple in my dinner rotation because they are juicy, flavorful, and even if you overcook them they will still be juicy and flavorful lol. If you’ve never done it you’re in for a treat, and it’s actually even easier than stuffing chicken breasts! This is going to be a Mediterranean Stuffed Chicken Thigh recipe and I have a sneaky suspicion this is going to become part of your dinner rotation. Let’s make it! 

Stuffing chicken thighs is actually way easier than stuffing a chicken breast. There’s literally no skill involved. All you have to do is peel back the skin from one side of the chicken, the side that is not connected to the meat, then simply take a heaping tbsp amount of stuffing and press it on to the meat. Then fold the skin right back over.

Ingredients
  

  • 10 bone-in skin-on chicken thighs
  • ½ cup of baby spinach chopped
  • 5 oz of sundried tomatoes roughly chopped
  • 4 tbsp of sun dried tomato oil divided
  • 8 oz of cream cheese softened
  • 3 tbsp parmesan
  • 7-8 garlic cloves chopped
  • 2-3 tbsp fresh parsley chopped
  • ½ cup olive oil
  • ½ tsp garlic powder
  • ½ tsp italian seasoning
  • 2-3 tsp paprika
  • Salt & pepper to taste
  • 1 Lemon Juice of lemon and zest

Instructions
 

  • In a measuring cup add lemon juice, olive oil, salt & pepper, and squeeze in the excess sun dried tomato oil out of the sun dried tomatoes (should be about a tbsp of the oil), then set the sun dried tomatoes aside. Also to the measuring cup add another 3 tbsp of the sun dried tomato oil from the jar and whisk everything together.
  • In a large bowl add softened cream cheese, lemon zest, spinach, parmesan, chopped garlic, parsley, the set aside sun dried tomatoes, garlic powder, Italian seasoning, and salt & pepper. Mix that together until everything is incorporated.
  • Add your chicken thighs into a 9×13 baking dish skin side up. Begin peeling back the skin on each piece of chicken, take about 2-3 tbsp (or a heaping spoonful) of the cream cheese mixture, spread it on top of the chicken, and then put the skin back over the chicken to cover the cream cheese mixture.
  • Once you have stuffed all the chicken thighs, shake paprika and salt & pepper over all of the chicken thighs. Then take your measuring cup and pour the oil mixture evenly over all the chicken thighs.
  • Place the baking dish in the oven uncovered at 375°F for 50-60 minutes or until the chicken reaches an internal temperature of 165°F – 170°F.
  • Once the chicken is done and you’re ready to serve it, spoon the oil from the baking dish over the chicken thighs to make them even more juicy. Enjoy!

    I MADE IT! EXCELLENT!
    I used boneless, skinless, thighs, because that’s what I had. Put stuffing on top. Baked exactly the same way, same time. Served with cauliflower mashed & French string beans.
