When I was in my 20s, raising my babies, working full-time as a teacher and specialist for the Palm Beach County School District, and driving my kids to every sport under the sun — baseball, t-ball, football, basketball, you name it — there wasn’t much time during the week to cook a real dinner. So I leaned on the crockpot!

1. French Onion Crock-Pot Roast

This beauty deserves the feature photo. It’s rich, savory, fall-apart tender, and the kind of meal that makes people swear you slow-braised it all day in the oven… but nope — it’s all the crock-pot.

It’s a true dump-and-go recipe using chuck roast, which I think is the absolute BEST cut for slow cooking because it becomes buttery and tender. If you didn’t see the crock-pot sitting there, you’d never guess this wasn’t made in a Dutch oven.


2. Classic Crock-Pot Pot Roast

Another chuck roast favorite, and the definition of comfort. This one cooks into a complete meal — juicy roast, tender potatoes, carrots, and onions — all in one pot.

I add a couple little secret touches in the recipe that deepen the flavor and seal the deal. It’s the perfect Sunday dinner. Just load the crock-pot, go about your day, and come home to a classic pot roast that tastes like you put way more effort into it.


3. “Poor Man’s” Ragu (Crock-Pot Chuck Roast Ragu)

If you love luxurious slow-braised short rib ragu, you will LOVE this version that uses chuck roast instead of pricey short ribs. Serve it over fettuccine and it tastes like a restaurant dinner.

It’s not identical to my Short Rib Ragu, but it’s pretty darn close — and so comforting and rich.


4. Crock-Pot Italian Beef

This one is legendary. The beef becomes so tender, with this incredibly flavorful juice that you can spoon over everything.

Serve it simply shredded over mashed potatoes (SO good)… or make an open-faced Italian beef sandwich. I give instructions in the recipe for that version — pile the beef onto toasted bread, spoon the juices over top, add cheese, and broil at the end. The edges crisp, the cheese melts, and it’s unbelievable.

No browning. No searing. You’d never know.


5. Crock-Pot Steak & Gravy (with Stew Meat)

This recipe takes inexpensive stew meat and turns it into something that truly tastes like steak with gravy. It slow-cooks into tender bites coated in the richest sauce.

The flavor comes from my three little secret ingredients: fresh rosemary, tomato paste, and one more surprise that makes the sauce taste like it cooked all day.

Serve it over mashed potatoes, noodles, or rice. Absolute comfort.


6. Crock-Pot Mississippi Chicken

One of the biggest fan favorites ever — my kids beg for this. The sauce is sweet, savory, garlicky, glossy, and tastes like the best Chinese takeout.

I use boneless, skinless chicken thighs so the meat stays juicy and tender. Serve with rice or noodles and you have a meal everyone loves.


8. Crock-Pot Tuscan Chicken

Think “marry me chicken,” but slow-cooked. It’s creamy, garlicky, and loaded with sun-dried tomatoes.

You can serve the chicken whole, but I love shredding it and piling it onto toasted bread. Dip the toast in the creamy sauce and thank me later.

This one is always a hit.


9. Crock-Pot Lemon Chicken & Potatoes (Greek Style)

This might be one of the BEST crock-pot recipes I’ve ever created. The Greek-inspired flavors — lemon, garlic, herbs — are bright and bold, and the potatoes soak up all that goodness.

It slow-cooks into tender chicken, perfectly flavored potatoes, and the most delicious pan juices. The measurements in this one? Chef’s kiss. Unreal.


10. Crock-Pot Mojo Pork

My FAVORITE pork recipe of all time. Nothing even comes close. I also have an oven version

but the crock-pot version is unbelievable.

You throw a Boston butt into the slow cooker with my mojo ingredients and it transforms into juicy, citrusy, Cuban-style pork that tastes like a restaurant dish. Serve over rice and drizzle with the mojo juices — next level.

The next day, mix the leftovers with barbecue sauce and make Sticky BBQ Chicken and Beans.

Two completely different meals from one batch of pork. Love that.
