Ingredients
  

  • 1 pint of cherry tomatoes halved
  • 1 diced red bell pepper
  • 1 English cucumber chopped and quartered
  • 1/2 cup of kalamata olives chopped
  • 14 oz can of artichoke hearts roughly chopped
  • 1 small can of chickpeas
  • 1/2 cup of fresh parsley chopped
  • 1 lb. of rotini pasta
  • 1 cup of mayo
  • 1/4 cup of red wine vinegar
  • 1 tbsp. of dried oregano
  • 1 tsp of sugar
  • Salt and pepper to taste
  • Feta cheese crumbled

Instructions
 

  • Preparation: Start by chopping and prepping your ingredients. Halve the cherry tomatoes, chop and quarter the English cucumber & red bell pepper, and roughly chop the kalamata olives and artichoke hearts. Drain and rinse the chickpeas, and finally, chop the fresh parsley. Place all these ingredients into a large bowl.
  • Boil the Pasta: Grab your favorite pot and fill it with water. Bring it to a rolling boil and add the rotini pasta. Cook according to the package instructions until the pasta is al dente. Once it’s cooked, drain the pasta and add it to the bowl with the veggies.
  • Prepare the Dressing: In a separate bowl, whisk together 1 cup of mayo and 1/4 cup of red wine vinegar. Once the mixture is smooth, season it with 1 tbsp. of dried oregano and 1 tsp of sugar. Add salt and pepper to taste and give it another whisk.
  • Combine Everything: Pour the dressing over the pasta and veggies in the large bowl. Toss everything together until the dressing coats all the ingredients evenly. The colors and flavors are already starting to make this pasta salad look and taste amazing!
